Party in a Pot


Wow, so it's been almost a year since I last posted! I knew it had been a while, but I didn't know it had been that long!! Well in my effort to eat healthy I have been cooking dinner almost non stop for the past two months. After cooking all of my tried and true recipes a couple of times and getting tired of them, I have begun trying out new recipes. I am looking for something WONDERFUL. Now you have to also know that my definition of Wonderful is 1) I love it 2) My whole family loves it (which is a feat all in itself) and 3) It's easy to do.
I have found some that fit all of these qualifications which makes me estatic! It gives me another thing to cook in my regular rotation. My latest find is what I cooked tonight, Fiesta Chicken, or as we are calling it "Party in a Pot."

Here's the recipe:

2-4 Chicken breasts (whatever you have on hand I used 3)
1 can fat free cream of chicken soup
1 can mexican corn
1 can black beans
1 cup salsa
1 pack taco seasoning
2 cups cooked rice (I just used a boil in a bag whole grain brown rice that only takes 10 minutes to cook)
cheese or other desired toppings
Place chicken breasts in bottom of slow cooker. Top with cream of chicken soup. On top of that add corn, black beans, salsa, and taco seasoning. Stir. Cover with lid and cook on low 7-8 hours on low. When ready to serve, stir in your cooked rice and put a little low-fat cheese on top.

Some of us ate this just on the plate with a couple of tortilla chips on the side. Some of us used the mixture to put in tacos. However you do it, it's great!! Or as my son said, this is the awesomest!!
